Ingredients

Protein

  • 8 oz beef strips (sirloin or flank steak)

Aromatics

  • 3 cloves fresh garlic (minced)

Sauces & Pastes

  • 2 tbsp chili paste (sambal oelek)

Noodles

  • 8 oz egg noodles

Vegetables

  • 1 cup bell peppers (sliced)
  • 2 cups bok choy (chopped)

Seasonings

  • 3 tbsp low-sodium soy sauce

Garnish

  • 2 green onions chopped (for garnish)

Instructions 

  • Boil water, cook noodles until al dente (3-4 min), then drain.
  • In a skillet, heat oil and cook beef seasoned with salt until browned (3-5 min).
  • Add garlic and chili paste; cook until fragrant (~30 sec).
  • Stir in bell peppers, bok choy, and soy sauce; cook until veggies soften (~2-3 min).
  • Add cooked noodles; toss to combine (~1 min).
  • Garnish with chopped green onions and serve immediately.

Notes

Feel free to add more chili paste for extra heat or adjust vegetables to your preference.
