Ingredients

Dairy & Eggs

  • 1 cup cottage cheese
  • 2 large eggs

Dry Ingredients

  • 0.5 cup almond flour ((or oat flour for a softer texture))
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1–2 tsp honey or maple syrup ((optional for sweetness))
  • 1 tsp baking powder
  • Pinch salt

Fruit

  • 1 medium apple (peeled, cored, and chopped)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix cottage cheese, eggs, vanilla, and honey until smooth.
  • Add almond flour, cinnamon, baking powder, and salt; stir to combine.
  • Fold in chopped apple evenly into batter.
  • Spoon batter into muffin tin and bake for 20–25 minutes until golden.
  • Cool briefly before serving. Enjoy warm or at room temperature!

Notes
