Instructions
Boil diced potato until fork-tender, then drain.
Sauté ground beef and onion until browned, then add bell pepper, peas, garlic, spices, cooked potatoes, tomato paste, and broth; cook until liquid reduces. Remove from heat.
Roll out pie crusts and cut into 4-inch circles, gathering scraps to make about 10 circles.
Mix egg whites and water to make egg wash. Fill each dough circle with about 2 tablespoons of filling, brush edges with egg wash, fold, and crimp with a fork.
Brush empanadas with egg wash and air fry at 350°F for 8-10 minutes, turning halfway, until golden and crispy.
