Delicious homemade empanadas with savory beef and vegetable filling, perfectly cooked in the air fryer for a crispy exterior.

Ingredients

Diced Potato

  • 4 ounces diced potato

Ground Beef

  • 0.5 pound lean ground beef

Yellow Onion

  • 1/3 cup yellow onion, minced

Red Bell Pepper

  • 1/2 red bell pepper red bell pepper, finely diced

Frozen Peas

  • 1/3 cup frozen peas

Garlic Cloves

  • 2 cloves garlic, minced

Salt

  • 1 teaspoon salt

Pepper

  • 0.5 teaspoon pepper

Paprika

  • 1 teaspoon paprika

Cumin

  • 1 teaspoon cumin

Oregano

  • 1 teaspoon oregano

Chili Powder

  • 1 teaspoon chili powder

Tomato Paste

  • 1 tablespoon tomato paste

Beef Broth

  • 0.25 cup beef broth

Premade Pie Crusts

  • 2 pieces premade pie crusts

Egg Whites

  • 2 egg whites egg whites

Water

  • 2 tablespoons water

Instructions 

  • Boil diced potato until fork-tender, then drain.
  • Sauté ground beef and onion until browned, then add bell pepper, peas, garlic, spices, cooked potatoes, tomato paste, and broth; cook until liquid reduces. Remove from heat.
  • Roll out pie crusts and cut into 4-inch circles, gathering scraps to make about 10 circles.
  • Mix egg whites and water to make egg wash. Fill each dough circle with about 2 tablespoons of filling, brush edges with egg wash, fold, and crimp with a fork.
  • Brush empanadas with egg wash and air fry at 350°F for 8-10 minutes, turning halfway, until golden and crispy.

Notes

Ensure not to overcrowd the air fryer for even cooking.
