These high-protein chicken bites are quick to prepare and perfect for a healthy snack or meal, with juicy meat and crispy edges from the air fryer.

Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breast (or thighs for extra juiciness)
  • 1 tablespoon olive oil (or avocado oil)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • 0.5 teaspoon chili powder or cayenne (optional, for heat)
  • 1 tablespoon cornstarch (or arrowroot for extra crispness)
  • to taste cooking spray (nonstick, optional for the basket)
  • optional finishing toppings (lemon wedges, chopped parsley, hot honey, or your favorite dipping sauce)

Instructions 

  • Pat chicken dry and cut into 1-1.5 inch pieces.
  • Toss chicken with oil, salt, pepper, garlic powder, onion powder, paprika, and chili powder. Add cornstarch and toss to coat.
  • Preheat air fryer to 400°F (200°C). Lightly spray the basket.
  • Arrange chicken in a single layer and cook for 7-9 minutes, shaking halfway, until browned and internal temp reaches 165°F (74°C).
  • Let rest for 2 minutes, then serve with lemon, parsley, or hot honey, and your favorite dip.

Notes

For extra juiciness, use chicken thighs instead of breasts.
