A delicious rustic tart combining sweet apples and sharp cheddar cheese in a flaky crust, perfect for a cozy dessert or savory snack.

Ingredients

Dough

  • 170 g all-purpose flour
  • 0.25 teaspoon salt
  • 115 g unsalted butter (roughly cubed, cold)
  • 70 g ice cold water

Filling

  • 60 g cheddar cheese (finely shredded)
  • 60 g cheddar cheese (finely shredded)
  • 3 tart apples (thinly sliced) tart apples
  • 20 g unsalted butter
  • 1 tablespoon fresh thyme (finely chopped)
  • 0.125 teaspoon salt
  • 1 egg (beaten) beaten egg

Instructions 

  • Prepare the dough by mixing flour, salt, and cold butter until crumbly, then add cold water to form a dough. Chill for 15 minutes.
  • Roll out the dough into a circle, place sliced apples and shredded cheddar in the center, fold edges over, and brush with beaten egg.
  • Dot the filling with small pieces of butter and sprinkle with thyme and salt.
  • Bake at 200°C (390°F) for 30 minutes until golden brown.

Notes

Chill the dough well for a flaky crust and adjust baking time for a crisp finish.
