Delight in these moist and flavorful apple cinnamon muffins, perfect for breakfast or a snack.

Ingredients

Dry ingredients

  • 1 3/4 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cinnamon

Wet ingredients

  • 2 1/2 cups light brown sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 2 cups Diced apples (finely diced (such as Golden Delicious))

Topping

  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions 

  • Preheat oven to 425°F (220°C) and prepare muffin tin with liners.
  • Mix dry ingredients: flour, baking powder, salt, and cinnamon.
  • Combine wet ingredients: brown sugar, eggs, milk, vanilla, and melted butter.
  • Stir dry into wet just until combined; fold in diced apples.
  • Fill muffin cups 3/4 full; top with melted butter, sugar, and cinnamon mixture. Bake 15 minutes until golden.

Notes

For extra flavor, sprinkle a little extra cinnamon on top before baking.
