Instructions
Preheat oven to 425°F (220°C) and prepare muffin tin with liners.
Mix dry ingredients: flour, baking powder, salt, and cinnamon.
Combine wet ingredients: brown sugar, eggs, milk, vanilla, and melted butter.
Stir dry into wet just until combined; fold in diced apples.
Fill muffin cups 3/4 full; top with melted butter, sugar, and cinnamon mixture. Bake 15 minutes until golden.
Notes
For extra flavor, sprinkle a little extra cinnamon on top before baking.
