  • 1.25 cups milk (dairy or unsweetened non-dairy)
  • 2 tablespoons melted butter or neutral oil (plus more for the pan)
  • 1 teaspoon vanilla extract

Apple

  • 1 medium apple (peeled and cored, grated plus finely diced for texture)

Serving Toppings

Instructions 

  • Whisk dry ingredients together in a large bowl.
  • Whisk wet ingredients until smooth, then fold in grated and diced apple.
  • Let batter rest for 5-10 minutes, then cook pancakes on a greased skillet until bubbles form, about 2-3 minutes per side.
  • Flip and cook until golden, then keep warm while cooking remaining batter.
  • Serve pancakes warm with butter and maple syrup.

Notes

For extra flavor, add a pinch of extra cinnamon or nutmeg to the batter.
