Ingredients

Wet ingredients

  • 2.5 tablespoons warm water
  • 1 tablespoon ground flax seeds
  • 1 ¾ cups vanilla plant-based milk ((plain or chocolate))
  • 1/3 cup vegetable oil
  • 1 honeycrisp apple cored and grated or finely diced apple (moisture pressed out with a napkin)
  • 1 ½ teaspoons vanilla extract

Dry ingredients

  • 2 cups all-purpose flour ((whole wheat optional))
  • 1 ½ tablespoons granulated sugar
  • 1 tablespoon brown sugar (or coconut sugar)
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 ½ teaspoons ground cinnamon

Instructions 

  • Preheat your waffle iron.
  • Mix warm water and flax seeds; set aside for 10 minutes.
  • Whisk plant-based milk, oil, apple, and vanilla; set aside.
  • Combine dry ingredients; create a well and add wet mixtures. Gently whisk until just combined.
  • Scoop batter onto waffle iron and cook until golden. Repeat with remaining batter.

Notes

For extra flavor, add a dash of nutmeg or serve with maple syrup.
