Ingredients

Crumble Topping

  • 0.75 cup all purpose flour
  • 0.25 cup packed light brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon (optional)
  • 4 tablespoons unsalted butter (melted)

Muffin Batter

  • 2 cups all purpose flour
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground nutmeg (optional)
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup packed light brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter (room temperature)
  • 0.25 cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 0.5 cup milk (room temperature)
  • 1.5 cups diced apples (Granny Smith or Honeycrisp)

Instructions 

  • Preheat oven to 400°F and line muffin tin with paper liners.
  • Mix crumble ingredients, add melted butter, and set aside.
  • Whisk dry ingredients for batter; beat sugars and butter, then add eggs, sour cream, and vanilla.
  • Combine dry and wet, add milk, fold in apples, then fill muffin cups and top with crumble.
  • Bake for 20 minutes until golden, then cool on wire rack.

Notes

Use fresh apples for best flavor and texture.
