Delicious fluffy pancakes infused with grated apples and warm spices, perfect for a cozy breakfast.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Wet Ingredients

  • 1 3/4 cups whole milk
  • 2 large eggs
  • 3 tablespoons melted butter (plus extra for cooking)
  • 1 teaspoon vanilla extract

Apple Mixture

  • 2 medium apples, peeled and grated (about 1 1/2 cups)
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar

For Serving

  • to taste Maple syrup
  • to taste extra butter (for serving)

Instructions 

  • Peel, grate apples, toss with lemon juice and brown sugar. Set aside.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry, fold in apple mixture. Cook pancakes on buttered griddle until golden.
  • Flip and cook until golden brown. Serve with butter and maple syrup.

Notes

For extra flavor, sprinkle with cinnamon before serving.
