Ingredients

filling

  • 2 pieces granny smith apples, peeled and finely diced ((4 cups))
  • 2 tablespoons unsalted butter
  • ½ cup packed light brown sugar
  • 1 lemon zested and juiced

seasoning

  • 2 tablespoons cornstarch

crust

  • 1 premade pie crust from a 14-ounce package (e.g., Pillsbury)
  • ¾ cup all-purpose flour
  • cup light brown sugar
  • 3 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, room temperature

Instructions 

  • Mix spices and toss diced apples with lemon zest and juice.
  • Cook apples with butter, brown sugar, and cornstarch until thickened.
  • Roll out pie crust and cut into cookies; fill with apple mixture.
  • Bake at 375°F (190°C) for 20 minutes until golden.
  • Let cool before serving.

Notes

For best flavor, use fresh apples and adjust sugar to taste.
