Delicious and easy-to-make oatmeal bars with a sweet apple filling and a buttery crust, perfect for breakfast or a snack.

Ingredients

Filling

  • 2 cups apples (cored, peeled, and chopped)
  • 2 tablespoons unsalted butter
  • 1/4 cup light brown sugar (firmly packed)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons water
  • 1/4 teaspoon salt

Crust

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup brown sugar (firmly packed)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 14 tablespoons unsalted butter (cut into pieces)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix chopped apples with 2 tbsp water, 1/4 cup brown sugar, 1 tsp cinnamon, and 1/4 tsp salt. Set aside.
  • Combine flour, oats, brown sugar, baking powder, and salt for the crust. Cut in butter until crumbly.
  • Press half of the crust mixture into a baking pan. Spread apple filling over it, then top with remaining crust mixture.
  • Bake for 40 minutes until golden. Let cool before slicing.

Store in an airtight container for up to 3 days.
