Ingredients

Fruits and Spices

  • 2 pieces sweet apples (peeled and diced)
  • 1 tablespoon brown sugar or maple syrup
  • 2 teaspoons ground cinnamon
  • Pinch kosher salt

Wet Ingredients

  • 2 cups unsweetened non-dairy milk
  • 1 tablespoon maple syrup or brown sugar
  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger (optional)
  • 1/8 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon kosher salt

Dry Ingredients

  • 2 cups quick-cooking or rolled oats
  • 1 tablespoon chia seeds
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions 

  • Cook apples: Sauté apples with maple syrup, cinnamon, and salt until tender, about 8 minutes.
  • Mix wet ingredients: Combine non-dairy milk, maple syrup, vanilla, and salt in a bowl. Optional: blend in cooked apples for extra flavor.
  • Add dry ingredients: Stir in oats, cinnamon, ginger, nutmeg, and chia seeds. Let sit 10 minutes.
  • Assemble: Divide mixture into jars, layer with cooked apples, and top with nuts if desired.
  • Chill and serve: Refrigerate at least 10 minutes before serving. Keeps up to 5 days.

Notes

For extra flavor, blend some cooked apples into the milk mixture.
