A quick and nutritious breakfast featuring creamy avocado, crispy toast, and a perfectly cooked egg.

Ingredients

Bread

  • 4 slices whole grain bread
  • 0.5 tsp salt
  • 0.25 tsp freshly cracked pepper
  • 0.5 lemon lemon juice (from half a lemon)

Optional toppings

  • as desired chili flakes, feta cheese, microgreens (optional)

Eggs

  • 2 pieces eggs

Instructions 

  • Halve the avocados, remove pits, and scoop flesh into a bowl. Mash until smooth, then mix in lemon juice, salt, and pepper.
  • Toast the bread slices until golden brown.
  • Cook eggs in a skillet over medium heat until whites are set and yolks are runny.
  • Spread mashed avocado on each toast, top with an egg, and add optional toppings if desired.
  • Serve immediately and enjoy!

Notes

For extra flavor, add a sprinkle of chili flakes or some crumbled feta on top.
