1/2cuplight or dark brown sugar
1/2teaspoonfresh orange zest

4mediumapples, peeled and sliced(about 4 cups/500g)
1/4cupapple cider
1/3cupbrown sugar(light or dark)
1teaspoonground cinnamon
1/4teaspoonground allspice
1/4teaspoonground nutmeg
1/8teaspoonsalt
3/4cuppecan halves

Instructions
Slice bread into 1-inch slices and let sit out for a few hours or overnight.
Whisk eggs, apple cider, milk, sugar, orange zest, vanilla, cinnamon, and salt; dip bread slices and arrange in a baking dish.
Cook apples with cider, sugar, spices, and salt until slightly softened; stir in pecans.
Pour apple mixture over bread, cover, and refrigerate for at least 3 hours.
Preheat oven to 350°F (177°C); bake uncovered for 20 minutes, then cover and bake 25–35 minutes until set.
Cool slightly, then serve with optional toppings like sugar, syrup, or caramel.
Notes
For best results, soak the bread overnight to ensure it absorbs the custard fully.
