A delicious baked French toast casserole infused with apple cider and topped with caramelized apples and pecans, perfect for a cozy breakfast or brunch.

Ingredients

Bread

  • 1 loaf French bread, brioche, or challah
  • 6 large eggs
  • 1 cup apple cider
  • 1 cup whole milk
  • 1/2 cup light or dark brown sugar
  • 1/2 teaspoon fresh orange zest
  • 1 teaspoon pure vanilla extract
  • pinch cinnamon
  • pinch salt
  • 4 Tbsp unsalted butter

Apple topping

  • 4 medium apples, peeled and sliced (about 4 cups/500g)
  • 1/4 cup apple cider
  • 1/3 cup brown sugar (light or dark)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 3/4 cup pecan halves

  • confectioners’ sugar, maple syrup, and/or salted caramel sauce

Instructions 

  • Slice bread into 1-inch slices and let sit out for a few hours or overnight.
  • Whisk eggs, apple cider, milk, sugar, orange zest, vanilla, cinnamon, and salt; dip bread slices and arrange in a baking dish.
  • Cook apples with cider, sugar, spices, and salt until slightly softened; stir in pecans.
  • Pour apple mixture over bread, cover, and refrigerate for at least 3 hours.
  • Preheat oven to 350°F (177°C); bake uncovered for 20 minutes, then cover and bake 25–35 minutes until set.
  • Cool slightly, then serve with optional toppings like sugar, syrup, or caramel.

Notes

For best results, soak the bread overnight to ensure it absorbs the custard fully.
