A nutritious and delicious breakfast option combining cottage cheese and fresh blueberries, baked to perfection.

Ingredients

Dairy

  • 2 cups cottage cheese
  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup oats (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare baking dish with cooking spray or oil.
  • Mix cottage cheese, honey, vanilla, and cinnamon until smooth.
  • Spread half of the mixture in the dish and sprinkle with blueberries.
  • Add remaining cottage cheese mixture over blueberries, then top with oats and nuts if using.
  • Bake for 25-30 minutes until golden and puffed. Let cool for 5 minutes before serving with extra honey or syrup.

Notes

Feel free to add more nuts or oats for extra texture and flavor.
