Baked Butternut Squash Pasta

A comforting and flavorful pasta dish featuring roasted butternut squash, sage, and melted cheese, baked to perfection.

Ingredients

Pasta

  • 1 pound penne (or rigatoni, ziti, etc.)
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 3 ounces tomato paste
  • 2 cups low sodium chicken stock
  • 5 cups butternut squash (cubed)
  • 1/4 cup sage (chopped)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3/4 cup Parmigiano Reggiano (grated)
  • 1/2 pound mozzarella cheese (shredded, divided)

Instructions 

  • Preheat oven to 400°F (200°C). Saute onion in butter and olive oil until soft (~5 min).
  • Add tomato paste, chicken stock, squash, sage, salt, and pepper; cook until squash is tender (~20 min).
  • Cook pasta until very al dente (~2 min less than package).
  • Mix half of squash sauce with pasta, add cheese and 2/3 mozzarella; combine gently.
  • Layer sauce in baking dish, add pasta, top with remaining sauce and mozzarella, then bake covered for 20 min, uncover and bake 10 min, broil if desired.

Notes

Let the dish rest for 5-10 minutes before serving for best flavor and texture.
