A flavorful baked dish combining sweet caramelized onions, sun dried tomatoes, and tender chicken thighs, finished with a creamy parsley sauce.

Ingredients

Vegetables

  • 3 large yellow onions (sliced thin)
  • 1 head garlic (top sliced off)
  • 1/2 cup sun dried tomatoes (chopped)
  • heavy drizzle olive oil
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tbs balsamic vinegar
  • 1.7 lbs boneless + skinless chicken thighs (cut into strips)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup heavy cream
  • 1 handful fresh parsley (chopped)

Instructions 

  • Preheat oven to 400℉ (200℃).
  • In a baking dish, combine onions, sun dried tomatoes, seasonings, balsamic, toss, add garlic, drizzle with olive oil, cover, and bake for 1 hour, tossing halfway.
  • Season chicken with salt, garlic powder, onion powder. Cook in batches in a skillet with olive oil for 3-4 minutes per side.
  • Remove garlic, squeeze out cloves, add heavy cream, parsley, and cooked chicken to the dish. Stir to combine.

Notes

Use fresh parsley for best flavor and consider adjusting seasonings to taste.
