Ingredients

Pumpkin Mixture

  • 1 cup pure pumpkin (not pumpkin pie filling)
  • 2 large eggs (room temperature, lightly beaten)
  • ¼ cup pumpkin pie spice coffee creamer (or milk or half and half)
  • ¼ cup coconut oil (or vegetable oil)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon fine sea salt
  • ¼ cup butter
  • ¼ cup maple syrup
  • 2 tablespoons pumpkin pie spice coffee creamer (or milk or half and half or heavy cream)
  • 1 teaspoon maple extract
  • 1⅓ cups powdered sugar

Instructions 

  • Preheat oven to 350°F (175°C) and prepare donut pan.
  • Mix pumpkin, eggs, creamer, oil, and vanilla until smooth.
  • In a separate bowl, combine flour, sugars, baking powder, baking soda, spices, and salt.
  • Gradually add dry ingredients to wet, mixing until just combined. Fill donut molds.
  • Bake for 15 minutes or until a toothpick comes out clean. Let cool.
