A nutritious and colorful meal combining lean chicken, fresh vegetables, and fragrant rice for a balanced and satisfying dish.

Ingredients

Protein

  • 1 piece chicken breast, cut into strips
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt & pepper to taste Salt & pepper
  • Juice of 1/2 lemon lemon juice

Vegetables

  • 1/2 cup broccoli florets
  • 1/4 red bell pepper sliced red bell pepper
  • 1/4 yellow bell pepper sliced yellow bell pepper
  • 1 medium carrot, sliced

Rice

  • 1/2 cup jasmine or basmati rice
  • 1 cup water
  • Pinch salt

Instructions 

  • Toss chicken strips with olive oil, paprika, garlic powder, lemon juice, salt, and pepper. Marinate for 10 minutes.
  • Cook chicken in a hot skillet until golden and cooked through (6-8 min). Steam broccoli and carrots for 3-5 min. Keep bell peppers raw or lightly steam for 1 min.
  • Rinse rice, then cook with water and salt in a pot. Simmer for 12-15 min until water is absorbed. Fluff with a fork.
  • Assemble the bowl with rice, chicken, and vegetables. Serve warm.

Notes

Feel free to customize vegetables or add a drizzle of your favorite sauce for extra flavor.
