Instructions
Preheat oven to 400°F (200°C). Grease a 12-cup muffin tin or line with silicone liners.
In a large bowl, whisk together mashed bananas, milk, eggs, oil, and honey until smooth.
Add oats, brown sugar, cinnamon, nutmeg, and salt; stir until combined. Fold in chocolate chips and walnuts.
Divide mixture evenly into muffin cups, shake gently to level.
Bake for 15-20 minutes until golden and set. Serve warm or cooled.
Notes
For best results, refrigerate overnight before baking or serve immediately.
