Banana Chocolate Peanut Butter Crunch Cake

A decadent layered cake combining banana, chocolate, and peanut butter flavors, topped with crispy Cocoa Krispies for added crunch.

Ingredients

Dry Ingredients

  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 4 tbsp canola oil
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 3 ripe bananas mashed bananas
  • 3/4 cup plain Greek yogurt
  • 2 eggs eggs
  • 1 tsp vanilla extract

Chocolate Chips

  • 1/2 cup milk chocolate chips

Peanut Butter Layer

  • 2/3 cup creamy peanut butter
  • 4 tbsp softened butter
  • 2/3 cup powdered sugar

Chocolate Frosting

  • 2/3 cup unsweetened cocoa powder
  • 3-4 tbsp milk or heavy cream
  • 1 tsp vanilla extract
  • pinch salt

Cocoa Krispies

  • 1/4 cup Cocoa Krispies cereal

Additional

  • 2 1/2 cups sticks unsalted butter, softened

Instructions 

  • Preheat oven to 350°F (175°C). Mash bananas, then mix with oil, eggs, yogurt, and brown sugar.
  • Whisk dry ingredients separately, then combine with wet mixture until smooth. Melt chocolate chips and swirl into part of the batter.
  • Pour plain batter into greased pans, add chocolate swirl, and bake for 40-45 minutes. Cool completely.
  • Prepare peanut butter frosting and chocolate frosting. Layer peanut butter frosting in the middle of cooled cake, then frost entire cake and top with Cocoa Krispies.

Notes

For best results, use ripe bananas and ensure cakes are completely cooled before frosting.
