Enjoy these healthy and delicious banana oat muffins, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 2 cups rolled oats
  • cup protein powder
  • ¼ cup sliced almonds
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp sea salt

Wet ingredients

  • 1 cup mashed bananas (approximately 2-3 bananas)
  • 1 egg egg
  • ¾ cup milk
  • ¼ cup maple syrup
  • 2 tbsp melted butter

Instructions 

  • Preheat oven to 350° and grease a 12-cup muffin tin.
  • Mix dry ingredients in a bowl; mash bananas and add egg, whisk together.
  • Add wet ingredients to bananas and stir until smooth.
  • Combine wet and dry mixtures, then portion into muffin tin.
  • Bake for 30-35 minutes, cool for 15 minutes, then transfer to wire rack.

Notes

For extra flavor, add a handful of blueberries or chocolate chips before baking.
