Instructions
Preheat oven to 350° and grease a 12-cup muffin tin.
Mix dry ingredients in a bowl; mash bananas and add egg, whisk together.
Add wet ingredients to bananas and stir until smooth.
Combine wet and dry mixtures, then portion into muffin tin.
Bake for 30-35 minutes, cool for 15 minutes, then transfer to wire rack.
Notes
For extra flavor, add a handful of blueberries or chocolate chips before baking.
