These delicious and healthy banana oatmeal bars are perfect for a quick snack or breakfast on the go, combining ripe bananas, oats, and a touch of honey for natural sweetness.

Ingredients

Fruits

  • 3 pieces ripe bananas (Make sure your bananas are very ripe for the best sweetness and flavor.)

Dry ingredients

  • 2 cups rolled oats

Sweetener

  • cup honey or pure maple syrup (Increase slightly for a sweeter bar.)

Wet ingredients

  • 2 large eggs (Can be replaced with flax eggs or applesauce for a vegan version.)
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions 

  • Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  • In a large bowl, mash the bananas until smooth. Add eggs, vanilla, and honey, mixing well.
  • In a separate bowl, combine oats, baking powder, then fold into the wet mixture until evenly mixed.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 20 minutes or until golden brown. Let cool before slicing into bars.
