Enjoy these healthy, chewy banana oatmeal cookies with chocolate chips, perfect for a quick snack or dessert.

Ingredients

  • 2 medium ripe bananas (about 1 cup mashed)
  • 0.5 cup light brown sugar
  • 1 large egg (lightly beaten)
  • 1 teaspoon vanilla extract
  • 2.5 cups quick oats
  • Pinch sea salt
  • 0.5 cup mini chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  • Mash bananas, then mix in sugar, egg, and vanilla until combined.
  • Stir in oats and salt, then fold in chocolate chips.
  • Drop 1.5 tbsp dough onto sheets, flatten to ½ inch, and space apart.
  • Bake for 12-14 minutes until edges are golden. Cool on sheets for 5 minutes.

Notes

For softer cookies, slightly underbake and let cool.
