These delicious and healthy banana peanut butter oat bars are perfect for a quick snack or breakfast on the go.

2mediumripe bananas
Wet ingredients
1/2cupnatural creamy peanut butter
1/2cuppure maple syrup
3Tbsp.coconut oil, melted(or avocado oil)
1/2tsp.vanilla extract
Dry ingredients
2cupsold-fashioned rolled oats
2scoopscollagen protein (~20g)(sub protein powder of choice)
1/2cupchocolate chips(sub cacao nibs or dried fruit if vegan)
1/4cupfinely chopped walnuts(optional)
1/4tsp.kosher salt
Instructions
Preheat oven to 350ºF (175ºC) and line an 8x8 inch (20x20 cm) baking dish with parchment paper.
Mash bananas in a bowl, then stir in peanut butter, maple syrup, oil, and vanilla.
Add oats, protein powder, chocolate chips, walnuts (if using), and salt; mix well.
Pour mixture into the prepared dish, sprinkle extra chocolate chips if desired, and bake for 28-32 minutes. Cool for 30 minutes before slicing into 12 bars.
Slice into bars and refrigerate after 2 days for freshness.
Notes
Optional sprinkle of flaky salt adds extra flavor.
