A vibrant and flavorful bowl combining crispy chicken, fresh vegetables, and a spicy-sweet sauce for a satisfying meal.

Ingredients

Protein

  • 1 pound boneless skinless chicken breasts (Can substitute with shrimp or tofu for variations.)
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup vegetable oil for frying (Ensure oil is hot enough before adding chicken.)

Base

  • 2 cups cooked jasmine rice (Can substitute jasmine rice for brown rice or quinoa.)
  • 1 cup shredded lettuce
  • 1 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • to taste sesame seeds for garnish (Optional)

Sauce

  • 1/2 cup mayonnaise (Can use non-fat mayonnaise or plain Greek yogurt.)
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (Adjust to taste.)

Instructions 

  • Coat chicken pieces with cornstarch, salt, pepper, garlic powder, and paprika.
  • Fry the coated chicken in hot vegetable oil until golden and cooked through, about 8-10 minutes.
  • Mix mayonnaise, sweet chili sauce, and sriracha to make the spicy sauce.
  • Assemble bowls with rice, lettuce, cucumber, carrots, green onions, and fried chicken. Drizzle with sauce and garnish with sesame seeds.

Notes

Ensure oil is hot enough before frying to achieve crispy chicken.
