A hearty and flavorful baked burrito dish combining seasoned ground beef, black beans, and melted cheese, perfect for a satisfying meal.

Ingredients

Meat and Beans

  • 1 lb ground beef (80/20 lean)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, finely chopped
  • 2 garlic cloves minced garlic
  • 1 cup tomato sauce
  • 2 teaspoons chili powder
  • 1 teaspoon cumin

  • 8 inch flour tortillas
  • 2 cups shredded cheddar cheese

Optional toppings

  • as desired sour cream, chopped cilantro, sliced jalapeños, avocado slices

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook ground beef in a skillet until browned, then add onion and garlic; cook until softened.
  • Stir in black beans, tomato sauce, chili powder, cumin, salt, and pepper; simmer for 5 minutes.
  • Layer beef mixture and tortillas in a baking dish, topping with cheese; repeat layers and finish with cheese.
  • Bake for 20-25 minutes until cheese is melted and bubbly. Let sit 5 minutes before slicing and serving with toppings.

Notes

For a spicier flavor, add hot sauce or jalapeños to the layers.
