A quick and flavorful dish combining seasoned ground beef, colorful peppers, and rice, perfect for a satisfying meal.

Ingredients

Meat and Vegetables

  • 1 lb ground beef (85/15 or 90/10)
  • 1 cup sliced bell peppers (red, green, yellow, or orange)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp black pepper
  • 0.25 tsp salt (start with 1/4 tsp)
  • to taste red pepper flakes or hot sauce (optional)
  • as desired garnishes: green onions, cilantro, avocado, lime, cheese, sriracha (optional toppings)

Cooked Rice

  • 2 cups cooked white rice (preferably day-old)

Instructions 

  • Prep all ingredients: dice onion, mince garlic, slice bell peppers, cook rice if needed.
  • In a skillet, cook ground beef until browned (6–8 min). Push to side.
  • Sauté onion and garlic until fragrant (1–2 min), then combine with beef.
  • Add peppers and cook 4–5 min until tender. Stir in tomato paste, soy sauce, spices, and red pepper flakes.
  • Mix in cooked rice, cook 2–3 min to meld flavors. Serve with toppings.

Notes
