A hearty and flavorful one-pan meal combining ground beef, rice, and vegetables, topped with melted cheese for a satisfying dinner.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef (90/10 preferred)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 red red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (uncooked)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning or dried oregano
  • 2 cups low-sodium beef broth
  • 1 can (8 oz) tomato sauce
  • 1 tsp Worcestershire sauce
  • 1.5 cups shredded Cheddar or Colby-Jack cheese

Optional Garnish

  • Fresh chopped parsley or green onions (for garnish)

Instructions 

  • Cook ground beef until browned, then drain excess grease.
  • Add onion, bell pepper, and garlic; cook until translucent and fragrant.
  • Stir in spices and rice; toast for 1-2 minutes.
  • Add broth, tomato sauce, and Worcestershire; bring to a boil, then simmer covered for 18-20 minutes.
  • Remove from heat, let stand 5 minutes, then fluff rice and top with cheese. Cover until melted, then garnish and serve.

Notes

For a richer flavor, use freshly grated cheese and fresh herbs for garnish.
