Rice
1cuplong-grain white rice, rinsed
¼teaspoonsalt
1 ½cupswater
1piecelime (zest and juice)
¼cupchopped cilantro
1tablespoonolive oil
1smallonion, diced
2clovesgarlic, minced
1poundlean ground beef
2tablespoonstomato paste
2tablespoonstaco seasoning
¼cupwater
1can (15 oz)black beans
1cupfrozen corn kernels, thawed
1cupchopped tomatoes
1cupshredded lettuce

Instructions
Bring rice, salt, and water to a boil, then reduce heat, cover, and cook for 15 minutes. Let sit covered for 5 minutes, then fluff and stir in lime zest, juice, and cilantro.
Heat olive oil in a skillet, cook onion for 5 minutes, add garlic and cook 1 minute. Add ground beef, cook until browned, about 7 minutes.
Stir in tomato paste and taco seasoning, add water, and cook for 2-3 minutes until saucy.
Divide cilantro lime rice among bowls, top with beef, beans, corn, tomatoes, and lettuce. Garnish with guacamole and lime wedges.
