Ingredients

Meat and Vegetables

  • 1 ½ pounds ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 14.5 ounce diced tomatoes
  • 10.75 ounce red enchilada sauce
  • 15 ounce black beans (drained, rinsed)
  • 15 ounce corn (drained)
  • 1 cup cooked rice
  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 1 ½ cups sharp cheddar cheese (shredded)
  • cup chopped cilantro
  • ¼ cup sliced green onions

Instructions 

  • Preheat oven to 350°F and spray a 3-quart casserole dish.
  • Cook beef and onions until browned; add garlic and cook 2 more minutes. Drain excess fat.
  • Add tomatoes, enchilada sauce, beans, corn, rice, and seasonings; simmer 10 minutes.
  • Transfer mixture to dish, top with cheese, and bake until bubbly. Garnish with cilantro and green onions.

Notes

For a spicier kick, add more red pepper flakes or hot sauce.
