A quick and flavorful one-skillet meal combining seasoned ground beef, enchilada sauce, and crispy tortillas topped with melted cheese.

Ingredients

Meat and Sauce

  • 1 pound lean ground beef
  • 1 Tablespoon olive oil
  • 19 ounce red enchilada sauce
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon Mexican oregano
  • 1 teaspoon salt
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder

Tortillas and Cheese

  • 8 corn tortillas corn tortillas (cut into triangles)
  • 1.5 cups shredded cheese Mexican blend or mix of cheddar and Monterey Jack

Instructions 

  • Heat oil in a large skillet over medium-high heat and cook ground beef until browned, about 5-6 minutes. Drain excess grease.
  • Add chopped onions and spices; cook for 3-4 minutes until softened.
  • Pour in enchilada sauce and simmer for 5 minutes.
  • Stir in tortilla triangles and ½ cup cheese; coat well.
  • Top with remaining cheese, cover, and let sit for 3-5 minutes until cheese melts.

Notes

For a spicier version, add chopped jalapeños or hot sauce.
