Instructions
Heat oil in a large skillet over medium-high heat and cook ground beef until browned, about 5-6 minutes. Drain excess grease.
Add chopped onions and spices; cook for 3-4 minutes until softened.
Pour in enchilada sauce and simmer for 5 minutes.
Stir in tortilla triangles and ½ cup cheese; coat well.
Top with remaining cheese, cover, and let sit for 3-5 minutes until cheese melts.
Notes
For a spicier version, add chopped jalapeños or hot sauce.
