A quick and flavorful dish combining tender beef, vegetables, and rice, all stir-fried to perfection.

Ingredients

Sauces and Oils

  • 2 tablespoons dark soy sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons vegetable oil (divided)

Eggs

  • 2 large eggs (lightly beaten)

Beef

  • 8 ounces beef sirloin (cut into strips)

Vegetables

  • 1 cup frozen peas and carrots
  • 1 medium sweet onion (diced small)
  • 2 scallions scallions (diced small)
  • 1 teaspoon freshly grated ginger
  • 2 cloves garlic (minced)

Seasonings

  • to taste salt and pepper
  • 3 cups day-old cooked white rice (broken up)

Instructions 

  • Whisk together soy sauces, oyster sauce, and sesame oil; set aside.
  • Heat 1 tbsp vegetable oil, scramble eggs, then remove and set aside.
  • Add remaining oil, cook beef until charred, then transfer to plate with eggs.
  • Sauté peas, carrots, onion, and scallions until soft; add ginger and garlic, cook 30 seconds.
  • Add rice, stir-fry for 4 minutes, then pour in soy sauce mixture, cook 1 minute.
  • Return beef and eggs, toss to combine, cook briefly if needed, then serve immediately.

Notes

Use day-old rice for best texture and flavor.
