A quick and flavorful skillet dish combining seasoned ground beef, tortillas, and melted cheese for a satisfying meal.

Ingredients

Main ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 10 oz can red enchilada sauce
  • 1 14.5 oz can diced tomatoes, drained
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • to taste Salt and black pepper
  • 6 small flour tortillas, cut into strips or quarters
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Garnishes

  • to taste Chopped cilantro
  • to taste Sour cream

Instructions 

  • Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, about 5-7 minutes.
  • Add diced onion and garlic; sauté until softened. Stir in enchilada sauce, tomatoes, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
  • Gently fold in tortilla pieces until coated. Sprinkle cheeses over the top.
  • Cover and cook for 3-5 minutes until cheese melts. Remove from heat and rest for a couple of minutes. Garnish with cilantro and sour cream.

Notes

For a spicier version, add jalapeños or hot sauce.
