red enchilada sauce

flour tortillas, cut into strips or quarters

shredded cheddar cheese

shredded Monterey Jack cheese

Instructions
Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, about 5-7 minutes.
Add diced onion and garlic; sauté until softened. Stir in enchilada sauce, tomatoes, cumin, chili powder, salt, and pepper; simmer for 5 minutes.
Gently fold in tortilla pieces until coated. Sprinkle cheeses over the top.
Cover and cook for 3-5 minutes until cheese melts. Remove from heat and rest for a couple of minutes. Garnish with cilantro and sour cream.
Notes
For a spicier version, add jalapeños or hot sauce.
