A quick and flavorful beef stir fry loaded with colorful vegetables, perfect for a weeknight dinner.

Ingredients

Meat

  • 1 lb beef sirloin, thinly sliced against the grain
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil

Vegetables

  • 1 red bell pepper, sliced red bell pepper
  • 1 green bell pepper, sliced green bell pepper
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced carrot
  • 1 small yellow onion, sliced yellow onion
  • 3 cloves garlic, minced garlic
  • 1 teaspoon fresh ginger, grated
  • 1/3 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 1/2 cup beef broth
  • 1 tablespoon cornstarch mixed with water (slurry)

Instructions 

  • Slice beef thinly, toss with cornstarch, and set aside. Prepare sauce by whisking soy, oyster sauces, sugar, sesame oil, and broth; stir in slurry.
  • Heat 1 tbsp oil, sear beef until browned, then remove. In same pan, add remaining oil, garlic, and ginger; cook until fragrant.
  • Add onions, carrots, broccoli; stir fry 2-3 mins, then add bell peppers; cook until crisp-tender.
  • Return beef to pan, pour in sauce, toss, and cook 2-3 mins until thickened.
  • Serve hot over rice or noodles, garnished as desired.

Notes

Use thinly sliced beef for quick cooking and tender results.
