A quick and flavorful one-pan meal combining seasoned beef, vegetables, and cheese, perfect for a satisfying dinner.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced bell pepper
  • 2 cloves garlic, minced
  • 1 cup corn kernels, fresh or frozen
  • 1 cup canned black beans, rinsed and drained
  • 1 cup diced tomatoes, canned or fresh
  • 1 cup shredded cheddar cheese
  • 1 tablespoon taco seasoning
  • 0.5 cup beef broth or water
  • 1 tablespoon olive oil

Seasonings

  • to taste Salt and pepper

Optional toppings

  • as desired sour cream, sliced jalapeños, chopped cilantro, lime wedges

Instructions 

  • Heat olive oil in a skillet over medium-high heat. Sauté onion and bell pepper for 3-4 minutes.
  • Add garlic and cook for 1 minute. Add ground beef and cook until browned. Drain excess fat.
  • Stir in taco seasoning, corn, black beans, tomatoes, and broth. Simmer for 5-7 minutes.
  • Sprinkle cheese over the mixture, cover, and cook until melted, about 2-3 minutes.
  • Garnish with toppings like sour cream, jalapeños, cilantro, and lime. Serve hot.

Notes

For extra flavor, add a squeeze of lime or chopped fresh cilantro before serving.
