Instructions
Heat olive oil in a skillet over medium-high heat. Sauté onion and bell pepper for 3-4 minutes.
Add garlic and cook for 1 minute. Add ground beef and cook until browned. Drain excess fat.
Stir in taco seasoning, corn, black beans, tomatoes, and broth. Simmer for 5-7 minutes.
Sprinkle cheese over the mixture, cover, and cook until melted, about 2-3 minutes.
Garnish with toppings like sour cream, jalapeños, cilantro, and lime. Serve hot.
