These delicious berry bars are quick to make and perfect for a healthy snack or dessert, with options for gluten-free and vegan versions.
Ingredients
Dough

rolled oats
(make sure to use certified gluten-free oats for a gluten-free version)

cup
flour

brown sugar
(or raw sugar)

lemon zest

baking powder
1/4
teaspoon
salt

coconut oil
Filling
2.5
cups
fresh blueberries
(do not use frozen)

raspberry jam
(or another berry jam, vegan if needed)

teaspoon
vanilla extract

Instructions
Preheat oven to 375°F (190°C) and line an 8"x8" baking pan with parchment.
Mix oats, flour, sugar, lemon zest, baking powder, and salt. Add coconut oil and combine into a dough.
Press two-thirds of the dough into the pan bottom. Bake for 10-13 minutes until edges brown.
Mix berries, jam, vanilla, and salt. Spread over crust. Sprinkle remaining dough on top.
Bake for 22-27 minutes until top is browned and filling bubbles. Cool completely and refrigerate before cutting.
Notes
Refrigerate leftovers for up to 4 days or freeze for longer storage.
