Berry Bars (super easy! regular or gluten-free/vegan)

These delicious berry bars are quick to make and perfect for a healthy snack or dessert, with options for gluten-free and vegan versions.

Ingredients

Dough

  • 1.5 cups rolled oats (make sure to use certified gluten-free oats for a gluten-free version)
  • 3/4 cup flour (see notes)
  • 1/2 cup brown sugar (or raw sugar)
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup coconut oil

Filling

  • 2.5 cups fresh blueberries (do not use frozen)
  • 7 tablespoons raspberry jam (or another berry jam, vegan if needed)
  • 1/2 teaspoon vanilla extract
  • pinch salt

Instructions 

  • Preheat oven to 375°F (190°C) and line an 8"x8" baking pan with parchment.
  • Mix oats, flour, sugar, lemon zest, baking powder, and salt. Add coconut oil and combine into a dough.
  • Press two-thirds of the dough into the pan bottom. Bake for 10-13 minutes until edges brown.
  • Mix berries, jam, vanilla, and salt. Spread over crust. Sprinkle remaining dough on top.
  • Bake for 22-27 minutes until top is browned and filling bubbles. Cool completely and refrigerate before cutting.

Notes

Refrigerate leftovers for up to 4 days or freeze for longer storage.
