2.5poundssweet potatoes(about 4 medium)

0.33cupwarmed milk(whole milk is best)

0.75cupchopped pecans
2tablespoonsbrown sugar
0.5teaspoonground cinnamon
Instructions
Preheat oven to 425°F. Scrub sweet potatoes, poke holes, and bake for 50-65 minutes until soft. Cool slightly.
Reduce oven to 350°F. Scoop out flesh, mash with butter, then mix in honey, cinnamon, salt, nutmeg, vanilla, milk, and egg.
Transfer mixture to an 8x8-inch dish. Mix pecans, brown sugar, and cinnamon for topping, sprinkle over casserole.
Cover with foil, bake for 20 minutes, then uncover and bake 20-25 minutes until lightly browned and center reaches 160°F. Rest 5 minutes before serving.
Notes
For extra flavor, toast the pecans before adding to the topping.
