Delight in these tender, fruity breakfast bars with a crunchy topping and a bright lemon glaze, perfect for a quick morning treat or snack.

Ingredients

Dough and Filling

  • 1 stick unsalted butter softened
  • 1 tbsp lemon zest
  • 3/4 cups sugar
  • 1 egg room temperature egg
  • 1 tsp vanilla extract
  • 1 3/4 cup flour
  • 1/4 cup flour (for tossing blueberries)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 cup blueberries (lightly tossed with flour)
  • 1/2 cup milk
  • 1/2 cup powdered sugar
  • 2-4 tbsp heavy cream (start with 2 tbsp and add as needed)
  • lemon zest to top

Instructions 

  • Preheat oven to 350°F (175°C). Prepare an 8×8 inch pan with nonstick spray or foil.
  • Cream together butter, 3/4 cup sugar, and lemon zest until light and fluffy.
  • Add egg and vanilla, mix until combined. Toss blueberries with 1/4 cup flour and set aside.
  • Mix flour, salt, and baking powder. Add half to wet ingredients, then remaining flour with milk. Fold in blueberries.
  • Spread batter into pan, sprinkle with 1 tbsp sugar, and bake for 40-45 minutes until golden and a toothpick comes out clean.
  • Cool for 10-15 minutes, then prepare glaze by mixing powdered sugar with 2 tbsp heavy cream. Drizzle over bars and top with lemon zest.

Notes

Ensure blueberries are lightly coated with flour to prevent sinking during baking.
