These homemade Blueberry Cashew Snack Bars are a delicious and healthy treat, packed with nuts, dried blueberries, and a hint of lemon zest.
Ingredients

Instructions
Preheat oven to 160°C (325°F).
Toast nuts for 5-8 minutes until fragrant, then line an 8x8-inch pan with parchment.
Mix nuts, cereal, and blueberries. Microwave syrup with lemon zest, whisk in vanilla and salt, then combine with dry ingredients.
Press mixture into prepared pan and bake for 18-20 minutes. Cool, then cut into bars.
