These homemade Blueberry Cashew Snack Bars are a delicious and healthy treat, packed with nuts, dried blueberries, and a hint of lemon zest.

Ingredients

nuts

  • 1 cup unsalted, unroasted almonds
  • 1.5 cups unsalted, unroasted cashews

cereal

  • 0.5 cup puffed rice cereal

dried blueberries

  • 0.75 cup dried blueberries

sweetener

  • 0.25 cup brown rice syrup
  • 1 teaspoon lemon zest
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoon sea salt

Instructions 

  • Preheat oven to 160°C (325°F).
  • Toast nuts for 5-8 minutes until fragrant, then line an 8x8-inch pan with parchment.
  • Mix nuts, cereal, and blueberries. Microwave syrup with lemon zest, whisk in vanilla and salt, then combine with dry ingredients.
  • Press mixture into prepared pan and bake for 18-20 minutes. Cool, then cut into bars.
