Delight in these buttery shortbread bars layered with a sweet blueberry filling and a crunchy crumble topping.
Ingredients
Shortbread Crust

unsalted cold butter

cups
all-purpose flour

cup
sugar

salt
Blueberry Filling
1½
cups
blueberries
(reserve ½ cup for folding)
½
cup
sugar
1
lemon
juice of 1 lemon

tsp
vanilla extract
Instructions
Cube the butter, then process with sugar, flour, and salt until dough forms.
Cook 1 cup of blueberries with sugar and lemon juice until boiling, then add vanilla.
Puree the blueberry mixture, fold in reserved blueberries, and set aside.
Press half of the shortbread dough into an 8x8 pan, then pour blueberry filling over it.
Crumble remaining dough over the filling and bake at 375°F for 35-40 minutes.
Cool completely before cutting into squares.
Notes
Chill the bars before serving for cleaner cuts.
