A quick and flavorful beef stir fry packed with colorful vegetables and a tangy sauce, perfect for a weeknight dinner.

Ingredients

Meat

  • 1 lb steak sirloin, skirt, or flank, thinly sliced
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground pepper

Cooking Oil

  • 2 tablespoons olive oil divided
  • 2 cloves garlic minced

Vegetables

  • 2 medium carrots peeled and thinly sliced into ¼" coins
  • 0.5 lb asparagus ends trimmed, sliced into 2" pieces
  • 1 medium red bell pepper thinly sliced
  • 1 medium yellow bell pepper thinly sliced
  • 6 oz snow peas

Sauce & Seasonings

  • 0.25 cup soy sauce or coconut aminos or tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh orange juice
  • 2 tablespoons honey
  • 1 tablespoon cornstarch or arrowroot powder
  • 2 teaspoons sesame oil

Instructions 

  • Freeze steak for 20–30 minutes, then slice against the grain.
  • Whisk together soy sauce, vinegar, orange juice, honey, cornstarch, and sesame oil to make the stir fry sauce.
  • Heat 1 tablespoon olive oil in a large skillet over high heat, cook steak for 3–4 minutes, then set aside.
  • Add remaining oil, stir fry carrots and asparagus for 3 minutes, then add peppers and snow peas, cook briefly.
  • Return steak to skillet, pour sauce over, and stir until heated through. Serve immediately.

Notes

For extra flavor, marinate the steak in the sauce for 15 minutes before cooking.
