Ingredients

ground beef (or ground turkey for a leaner option)

onion, finely chopped

garlic, minced

taco seasoning (or 2 tbsp homemade seasoning blend)

canned black beans, drained and rinsed

cooked rice (white or brown)

corn kernels (fresh or frozen)

salsa (choose your preferred heat level)

flour tortillas (or corn tortillas if preferred)

shredded cheddar cheese (or Mexican blend)

sour cream or Greek yogurt (optional, for serving)

Chopped fresh cilantro for garnish (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
Cook ground beef and onion in a skillet until browned, then add garlic and seasoning. Stir in water if needed.
Mix beef mixture with beans, rice, corn, and salsa. Layer tortillas, filling, and cheese in the dish, repeating layers.
Cover with foil and bake for 20 minutes, then remove foil and bake 10 more minutes until bubbly and golden.
Let sit 5 minutes, then garnish with cilantro and serve with sour cream if desired.
Notes
For a leaner option, use ground turkey instead of beef.
