Ingredients

Meat and Seasonings

  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade seasoning blend)
  • 1 cup canned black beans, drained and rinsed
  • 1 cup cooked rice (white or brown)
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup salsa (choose your preferred heat level)
  • 6 large flour tortillas (or corn tortillas if preferred)
  • 2 cups shredded cheddar cheese (or Mexican blend)
  • 1 cup sour cream or Greek yogurt (optional, for serving)

Garnish

  • to taste Chopped fresh cilantro for garnish (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  • Cook ground beef and onion in a skillet until browned, then add garlic and seasoning. Stir in water if needed.
  • Mix beef mixture with beans, rice, corn, and salsa. Layer tortillas, filling, and cheese in the dish, repeating layers.
  • Cover with foil and bake for 20 minutes, then remove foil and bake 10 more minutes until bubbly and golden.
  • Let sit 5 minutes, then garnish with cilantro and serve with sour cream if desired.

Notes

For a leaner option, use ground turkey instead of beef.
