A delicious and seasonal flatbread featuring roasted butternut squash, fresh apple, kale, and optional goat cheese for a savory treat.

Ingredients

Vegetables and Fruits

  • 3 cups butternut squash (cubed)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon maple syrup
  • 1 small shallot (finely chopped)
  • 2 cups kale (chopped)
  • 1 small Granny Smith apple (sliced or chopped)
  • 1/4 cup pecans (chopped)
  • 1 tablespoon goat cheese (optional)
  • 12 ounces pizza dough

Instructions 

  • Roast butternut squash at 400°F for 15 minutes.
  • Puree roasted squash, then roll out pizza dough and pre-bake at 425°F for 7 minutes.
  • Mix chopped shallot, kale, apple, and pecans.
  • Spread squash puree on crust, top with apple mixture, and bake for 12-15 minutes until golden.
  • If using goat cheese, add it immediately after baking. Slice and serve warm.

Notes

For extra flavor, drizzle with honey or add more goat cheese.
