Delightful flatbreads infused with roasted butternut squash and aromatic herbs, perfect for a cozy snack or meal.

Ingredients

Dough

  • 7 g instant yeast
  • 5 g granulated sugar
  • 30 g warm water
  • 186 g pumpkin purée
  • 120 g skyr or yogurt
  • 1 tsp baking soda
  • 2 tsp Diamond Crystal kosher salt
  • 0.5 tsp garlic powder
  • 0.5 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 0.5 tsp dried sage
  • 350 g all-purpose flour (plus extra for kneading)

Seed Topping

  • 0.25 cup white sesame seeds
  • 1 tbsp dried rosemary
  • 0.5 tsp dried sage

Instructions 

  • Mix yeast, sugar, and warm water; let sit until frothy.
  • Add pumpkin purée, yogurt, baking soda, salt, and herbs to the mixture.
  • Gradually add flour and knead until dough is smooth; rest for 40-50 minutes.
  • Divide dough into 8 balls, coat with seed mixture, and roll into 6-inch circles.
  • Cook on a greased skillet over medium-low heat for 2-3 minutes per side until golden and puffed.
