Ingredients

Pie Crust

  • 1 piece prepared pie crust (9-inch, baked and cooled)

Filling

  • 1 cup packed brown sugar
  • 0.25 cup cornstarch
  • 0.5 teaspoon salt
  • 2.5 cups whole milk
  • 4 large egg yolks
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Toppings

  • to taste Whipped cream (optional, for topping)
  • to taste Extra butterscotch chips or caramel sauce for garnish (optional)

Instructions 

  • Whisk together brown sugar, cornstarch, and salt in a saucepan.
  • Gradually add milk, whisking constantly; cook until thickened and bubbling (~5–7 min).
  • Temper egg yolks with hot mixture, then return to saucepan and cook 2–3 min until smooth.
  • Remove from heat, stir in butter and vanilla, then pour into crust and chill for at least 4 hours.
  • Top with whipped cream and garnish with butterscotch chips or caramel sauce before serving.

Notes

Ensure the pie is fully chilled before serving for best texture.
