A delicious and hearty Caesar salad topped with grilled chicken, perfect for a quick lunch or dinner.

Ingredients

Vegetables

  • 1 head Romaine Lettuce (washed and chopped)

Protein

  • 2 pieces Chicken Breasts (grilled and sliced)

Dressing

  • 1 cup Mayonnaise
  • 2 tablespoons Lemon Juice (freshly squeezed)
  • 1 tablespoon Dijon Mustard
  • 1 clove Garlic (minced)
  • 1 tablespoon Anchovy Paste (optional)
  • 1 cup Parmesan Cheese (shaved or grated)

Instructions 

  • Season chicken breasts with salt and pepper, then grill for 6-7 minutes per side until cooked.
  • Wash and chop romaine lettuce, then place in a large bowl.
  • Mix mayonnaise, lemon juice, Dijon mustard, garlic, and anchovy paste to make the dressing.
  • Slice grilled chicken and add to the salad, then drizzle with dressing and toss.
  • Top with shaved Parmesan cheese and serve immediately.

Notes

For a lighter version, use low-fat mayonnaise and reduce cheese.
