2 1/2cupsflour
1Tbspbutter(for dough)
1/3cupbrown sugar(for apples)
1 tspcinnamon
1 tbspbaking powder
1 tspbaking soda
1/2cupbutter, cold
1 cupGreek yogurtplain, 0 fat
1/4cupbutter
1/2cupbrown sugar
2Tbspmilk
1tspvanilla
1/2 - 1cupicing sugar(for caramel drizzle)
Apple filling
1largeapple (tart ones work better), diced
1 Tbspbutter(for apple mixture)
1 tspcinnamon
1 tspbrown sugar
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
Cook apple mixture: In a saucepan, combine butter, diced apple, cinnamon, and brown sugar. Cook until bubbly and apples soften (~5 min). Cool.
Mix dry ingredients: In a large bowl, combine flour, brown sugar, baking powder, baking soda. Cut in cold butter until coarse crumbs. Stir in yogurt and apple mixture to form dough.
Shape dough: Knead briefly, then roll into a 14x4 inch rectangle. Fold in half, re-roll, and cut into 9-10 triangles.
Arrange triangles on baking sheet, bake at 375°F for 15-18 min until golden.
Prepare caramel drizzle: In a saucepan, combine butter, brown sugar, milk, vanilla. Bubble and cook 1 min. Beat in icing sugar until smooth. Drizzle over cooled scones.
