Delight in these tender scones filled with tart apple and topped with a luscious caramel drizzle for a perfect breakfast treat or snack.

Ingredients

Dough

  • 2 1/2 cups flour
  • 1 Tbsp butter (for dough)
  • 1/3 cup brown sugar (for apples)
  • 1 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 cup butter, cold
  • 1 cup Greek yogurt plain, 0 fat
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 2 Tbsp milk
  • 1 tsp vanilla
  • 1/2 - 1 cup icing sugar (for caramel drizzle)

Apple filling

  • 1 large apple (tart ones work better), diced
  • 1 Tbsp butter (for apple mixture)
  • 1 tsp cinnamon
  • 1 tsp brown sugar

Instructions 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
  • Cook apple mixture: In a saucepan, combine butter, diced apple, cinnamon, and brown sugar. Cook until bubbly and apples soften (~5 min). Cool.
  • Mix dry ingredients: In a large bowl, combine flour, brown sugar, baking powder, baking soda. Cut in cold butter until coarse crumbs. Stir in yogurt and apple mixture to form dough.
  • Shape dough: Knead briefly, then roll into a 14x4 inch rectangle. Fold in half, re-roll, and cut into 9-10 triangles.
  • Arrange triangles on baking sheet, bake at 375°F for 15-18 min until golden.
  • Prepare caramel drizzle: In a saucepan, combine butter, brown sugar, milk, vanilla. Bubble and cook 1 min. Beat in icing sugar until smooth. Drizzle over cooled scones.

Notes

For best results, serve warm with extra caramel drizzle.
