Instructions
Preheat oven to 225°F (107°C). Pop the popcorn and set aside.
Make caramel: melt brown sugar, butter, and corn syrup; stir in spices, salt, baking soda, and vanilla.
Pour caramel over popcorn in parts, stirring to coat evenly.
Bake for 45 minutes, stirring every 15 minutes. Melt white chocolate in microwave.
Spread melted white chocolate over popcorn, add salt if desired, and cool until firm.
