Ingredients

Popcorn

  • 0.67 cup un-popped popcorn kernels
  • 1-2 tablespoons popping oil
  • 0.67 cup brown sugar
  • 0.5 cup butter
  • 0.33 cup corn syrup
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon salt (plus more as needed)
  • 0.5 teaspoon baking soda
  • 2 teaspoons vanilla
  • 0.5 cup white chocolate chips

Instructions 

  • Preheat oven to 225°F (107°C). Pop the popcorn and set aside.
  • Make caramel: melt brown sugar, butter, and corn syrup; stir in spices, salt, baking soda, and vanilla.
  • Pour caramel over popcorn in parts, stirring to coat evenly.
  • Bake for 45 minutes, stirring every 15 minutes. Melt white chocolate in microwave.
  • Spread melted white chocolate over popcorn, add salt if desired, and cool until firm.
